Rockwell measures the hardness of steel, with the ideal range being 58°. A lower value means a soft and inefficient blade, while a higher value makes the blade vulnerable to chipping or breaking. Our knives have a hardness range between 58°, which is perfect.
The high carbon content in German steel makes it stay sharp longer than Japanese steel. This makes cutting easier and increases the durability of the knife.
CookingTotem knives come with a lifetime warranty against manufacturing defects. This warranty does not cover damage from improper use, accidents, loss, or theft. Damage from cutting on hard surfaces, prying, twisting, bending, cutting frozen food or food with a hard shell, is not covered by the warranty. Also excluded is damage from dishwasher use, prolonged immersion in water, failure to dry immediately after washing, or use in a food service environment. Further, the warranty does not cover blunt blades, rust, discoloration, or bent, broken, or cracked blades.
